Improper Employer Management

I need your help to understand what should be done in my senarios as follow :
I was working in startup for almost 11months but they have not provided any documents stating that we are a startup dont have HR even so soon will provide we need your support for this so i was giving my 100% even worked for weeked to give all my efforts but even after 11months they havent provided anything saying that we dont have time.
so what i deed was i gave mail of resignation sating if by some date i will not get my documents i will not work even i will not give notice period as i am not aware of policy so director gave confirmation that you can quit.
and after that date also he dont provide anything and on some gave mail that please collect your letter but by that time i had joined next company so wasnt possible to go so i replied please provide softcopy first bcz i know how that guy is.
still he dont replied and when yesterday i went to collect the documents he is saying unless employee completes atleast 1yr we dont provide any offer letter or expericence letter so we will not give you anything and though if we provde any document we will say that we have fired you from our organization whereas due to his improper management and losing our trust i left that but its creating problem for me when my next company asking me for previous company offer and experience letter.
please suggest what i can do in this case as its gonna create 1yr as a gap for me only i have is account statement on which with company name i was getting salary.
please help i am really frustrated due to such organization.
