How should a new student learning computer science prepare for an upcoming java engineer internship in summer of 2019?

I apologize in advance if I’m posting this question in the wrong place. This past summer I recently took 2 programming courses learning java and c at an introductory level, essentially only console based programming where I would use Eclipse. I am trying to learn every thing I can concerning more practical programming knowledge that surrounds software engineering but I’ve never made an application which runs on a server or anything close to that. Also through a mutual connection, I met with the head engineer for a digital financial investment startup and he basically told me if I have a couple of well developed projects to show in February of next year when interviews for internships are conducted, then he’ll offer me an internship for the summer working on the product as a java engineering intern. So to be brief, I have the next four months to make at least 2 decent projects with the current Computer Science knowledge I have. I have looked at a bunch of different sources from building your own full stack application, joining a group of like minded developers to work on something, contributing to open source but I really don’t know where to start at the moment and I feel like I’m wasting a lot of time learning unnecessary knowledge and misunderstanding a lot of key concepts and methods.
