How to decide between 2 jobs? [closed]

One is a startup, US based with a software development center in my city, deals in data analytics etc. They have a probation period of 6 months for new employees, stipend is given during this period which is very less. Contract period is 1 year.
Other is a brand company, in another city, money offered won't compensate cost of living in that city. Job profile said that you will deal with networking and server related issues. The job offer is still awaited, and estimated after 4-5 months.
My eventual goal is to startup my own business related to IT industry, I am seeking job just to gain some hands on experience with some technology as to know "how exactly is the work done".
From what I have heard from some people is, brand company won't give you so much of a learning curve as the work is divided into hierarchies, till you reach that top level, it will be like 3-5 years. How much of this is true?
Basically I am confused, I don't want to regret later that if I had joined this, I would have been there etc.
I need some advice on how to make this decision.

That sort of answers your question, doesn't it? A job is supposed to sustain you, not the other way around (except for certain kinds of volunteer work, etc.).
Choose the offer that works best for you, try making a list of pro/cons for each offer, then compare.
